Trying to understand the science to this , is the green based on that im driving at a acceptable speed for best efficiency and the white part is what?
I notice if I floor it the green goes all the way down

I used to look at the efficiency coach but then I realized the green moved when I thought it should not so I just stopped looking. Plus I was worried I was going to stare too long at it and crash.

I think the electric part of this jeep is kinda gimmicky , almost to where it's a nice introduction to going into full hybrid, I swear I drive super efficient and as soon as I drive 1 mile I'm already at 87 percent , so I feel like I'm really only getting 17 miles of electric, could be me just being Cynical

It's not a lot of capacity. But it gets you a $7500 credit and if you only drive around town can net exceptional mileage. For me, I do some interstate driving and some mountain driving. That eats into my battery quite a bit. I typically swap to eSave in those scenarios. I will say that offroad driving in silence is very satisfying.

On that particular display, white is your average MPG and green your instantaneous. The division marks are 12½ MPG, 25 MPG, etc... That's why the green bounces around when you're working the throttle.
